How much would a local performance shop charge me for doing me a posi traction? cause i have a v6 stang

It depends on the shop, and where you are. Ohio seems to be cheaper than Florida for stuff (especially Miami area), but the shops around here I think charge around $500 + parts. I would think you should be somewhere in that ballpark, but like I said, Miami may be a bit more, since cost of living is higher, than BFE.... aka North East Ohio.

i was quoted $300 to have 3.73s installed with a detroit true trac

In all due respect, why not do it yourself? It's not difficult & can be done with the usual handtools. Get yourself a few qts. of AmsOil diff fluid & you can have a posi rearend in about 2hrs.
